Why I’m never making these Nutrient-Dense Date Balls ever again!

Last week I made these kick ass, nutrient-dense date balls and rolled them in Bulletproof upgraded chocolate powder.  This week I tweaked the recipe a bit and rolled them in shredded / flaked coconut. So easy to make, they have tons of nutrients (protein, omega 3s, fibre, calcium, magnesium, iron, zinc, phosphorus etc.) AND anti-inflammatory and kick your metabolism. They are also gluten-free, dairy-free, soy-free.  You can adjust the sweetness amount by adding more dates or other dried fruit (these were not too sweet, just the way I like my deserts) But I’m not making them again!  They are too freakin delicious and I can’t stop eating them!  Check out the recipe and let me know what you think:

T=Tablespoon, t=teaspoon, use only organic ingredients for the best effect on your body.

10 medjool dates (add more if you like sweet treats – I like my desserts semi-sweet)

8T coconut flakes / shredded coconut (leave 2T in a small bowl)

2T chia seeds

2T pumpkin seeds

2T rolled oats

1T Bulletproof upgraded chocolate powder

2T coconut oil

1T fresh ground ginger

1/4t turmeric powder

1/4t cayenne pepper

I threw the dry ingredients in the food processor first to bring them to a medium consistency and put them aside.  Then I threw in the dates, coconut oil, and ginger.  I added the dry to the wet, and threw in the spices (turmeric / cayenne) and processed until all combined.  Then rolled up up, rolled them in the remaining coconut and onto the tray.  That’s it!  I stored them in the fridge but I really didn’t need to because I ate them all in 24 hours 🙁
